Cranberry Wine

I have never made this, I am not responsible in any way if you do. Please read the introduction for more information. I have only adjusted formatting for webpage display, it is otherwise exactly how it appears in the notebook.

Based on Fruits of the Earth Recipe. Started October 6, 1977.

11qt Bosker(?) cranberries crushed in blender
12 qt water
(Margin note asking “Where’s the sugar?”)

We forgot this wine (also crab apple) and went on holiday, about 4 or 5 weeks later it tasted like vinegar and did not secon(?) to the fermenting. Added quite a lot of sugar and more yeast, it fermented well strained and put in bottles in early December.
